I made today's salad using up left over roasted butternut squash, red quinoa and wheat berries. I used dried cranberries and toasted almonds from my pantry. And I added baby arugula and goat cheese from Trader Joe's. Pretty affordable and filling. I made the dressing below to top it off.
Honey Sesame Vinaigrette
3 tablespoons honey
2 tablespoons rice wine
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/8 teaspoon sesame oil
1/2 teaspoon sesame seeds (optional)
Whisk everything together and enjoy!
