Mexican Stuffed Peppers




I love getting bell peppers at the 99 Cent Store, always 3 for 99 cents. :O) I found some rather large yellow ones and decided to stuff 'um. I saw this recipe online somewhere, I wish I could remember where. Anyhoo, all I did was saute' some ground turkey burger with a tad of hamburger for flavor. I sprinkled granulated garlic, salt and cumin and a handful of diced green onion and about 1/2 cup of enchilada sauce. I mixed it up with black beans and corn. I cleaned and blanched the bell peppers, stuffed them with the turkey mixture and topped them with jack cheese. I didn't really measure anything, sometimes that's how I like to roll. I baked them @350 for 20-30 minutes. We were all in food heaven!

Fast and easy always wins the day. These sound delicious and with peppers in season, they are also economical. Nice!

I've been off blogging for the last week and playing catch-up today. I'm glad I didn't miss this recipe. We love stuffed peppers at The Hut and I never thought to give them a Mexican twist. This is definitely something I'll be making.

I love those Dollar stores in California! Ours don't have fresh food and pepper are a dollar each in the market!
