My Top Ten Fav Picks From MM #84

Hi! By now, you've probally experienced the "it's too hot to cook" syndrome.
I know that I have. Here in Southern California, August and September and yes, sometimes even October are can be very warm here. 
I've come up with two very easy, filling and affordable salads. They can be made ahead and ready for dishing up for any eating schedules. This is important for when school is back in, sometimes we can't always eat at the same time.
Sometimes, I really crave seafood, which can be challenging to fit into a food budget. I wait until frozen bags of cooked and peeled shrimp go on sale. I used 5 shrimp per person for this meal. I used 1 lb. of microwave cooked linguini noodles, cooled, one large can of diced tomatoes, and one cup of Italian salad dressing. I tossed in a handful of salad greens for color.
The second salad is even easier. I mix one can of corn, one large, diced tomato and 1/2 cup of Italian salad dressing.  I make this particular salad frequently.  It's sooo easy to make and very inexpensive.  We use it as a side for hamburgers and hotdogs, instead of chips and almost always when we BBQ.
Don't forget to treat yourself to a pretty table scape now and then.  We rarely ever go out to eat and a table scape is fun. A pretty dish is just as easy to wash as a plastic one. And don't forget those fancy glasses everyone has and never uses! I filled mine with diet Minute Maid from the litre bottle and added lemon slices.
And go out to your garden every once in a while for some free flowers or greenery for your table.  I don't know the name of this flower, off hand.  Hubs found them by the curb and planted them. 
And last but not least, don't forget the candles too! I like to save money by using tealights and white flameless pillars.
